INGREDIENTS
2 cups diced carrots
1 orange
1 T butter
2 T orange marmalade
METHOD
1 Put juice and zest from one orange in sauce pan.
2 Add carrots and water to cover and bring to boil.
3 Cover and simmer until just tender.
4 Drain thoroughly and add butter and marmalade.
5 Mix until butter and marmalade are melted and well mixed.
